Forestry and Land Scotland manages forest parks across the country, welcoming visitors to dedicated hubs featuring cafés and community spaces. In late 2022, the organisation invited catering partners to tender for the management of public catering services at three key locations.

Contract Scope

In early 2023, Churchill Catering was awarded a ten-year contract to deliver high-quality catering at:

  • Kirroughtree Forest Café, Galloway Forest Park
  • Glentrool Forest Café, Galloway Forest Park
  • The Lodge Forest Café, Aberfoyle

The contract emphasises exceptional customer service and the use of locally sourced produce. Service standards, colleague training, compliance, and building maintenance are all central to the agreement.

Challenges & Solutions

Churchill Catering faced several mobilisation challenges, including:

  • Building a New Team: With no existing colleagues at The Lodge Forest Café, Churchill worked with recruitment specialists to attract and onboard a local management team and café colleagues.
  • Local Sourcing: To meet key performance indicators for local produce, Churchill’s procurement team partnered with nearby suppliers for meat, dairy, bakery, and fresh vegetables.
  • Rapid Mobilisation: The contract award coincided with the busy Easter period, requiring immediate mobilisation. Strong relationships with equipment suppliers enabled swift kitchen fitouts.
  • Remote Locations: Colleagues from neighbouring sites supported daily operations, while managers assisted with recruitment, ordering, and rota planning, demonstrating Churchill’s agility and collaborative approach.
  • Brand Alignment: The Marketing Team ensured all communications and visual branding met Forestry and Land Scotland’s guidelines.

Service Evolution

The partnership has continued to grow. In 2024, Forestry and Land Scotland invited Churchill Catering to manage an additional site at Glentress Forest Café, reflecting the trust and success of the relationship.
